- 4 medium cucumbers, rinsed and peeled
- 1/2 cup diced red onion
- 3/4 cup rice vinegar
- 2 1/2 teaspoons brown sugar
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons toasted sesame seeds
With a mandolin, slice the cucumbers into thin ribbons and place in a large bowl.
Add in chopped red onion, red pepper flakes, rice vinegar, brown sugar and water. Cover with a plastic wrap and place in the fridge for about 2 hours or until chilled.
Divide the zucchini noodle salad among bowls and top with toasted sesame seeds. Enjoy!
