Lean Steak with Healthy Pistachio Pesto

While there are a million and one ways to make pesto, this easy to make Healthy Pistachio Pesto is sure to be a favorite for your family and friends. Ingredients
  • 4 (6 oz.) lean beef steaks
  • 1 tablespoon extra-virgin olive oil
  • 1 cup baby spinach
  • 1 cup arugula
  • 1 cup halved cherry tomatoes
Pistachio pesto
Directions

In a food processor, process together pistachios, garlic, basil, mint, arugula, and toasted almonds until very smooth; add in oil, salt, and pepper and continue pulsing until very smooth. Set aside.

Preheat the BBQ grill on medium heat and then brush the meat with oil; season with salt and pepper. Grill for about 3 minutes per side or until cooked to your desire.

Wait for the juices to seal, then slice the steak and divide among the serving plates; top each serving with spinach and tomatoes and season with salt and pepper. Serve with the creamy pistachio pesto.
