This tasty Kale, Grapefruit & Avocado Salad with Toasted Seeds and Nuts are delicious as a light lunch or as a complement to any dinner.

- 2 tablespoons fresh-squeezed orange juice
- 1 tablespoon fresh-squeezed grapefruit juice
- 1 clove garlic, minced
- A pinch of sea salt
- A pinch of pepper
- 1/2 cup extra virgin olive oil
- 3 cups shredded kale leaves
- 1 cup chopped lettuce
- 1 avocado, sliced
- 1 pink grapefruit, sectioned
- 4 tablespoons sunflower seeds, toasted
- 4 tablespoon toasted chopped cashews
Make Dressing: In a small bowl, whisk together orange juice, grapefruit juice, garlic, salt and pepper; let sit for at least 10 minutes. Gradually whisk in extra virgin olive oil; set aside.
Add kale and lettuce to another bowl and drizzle with a splash of the dressing; massage for about 2 minutes and let sit until tender.
Divide kale among serving plates and top each serving with sliced avocado and grapefruit; sprinkle with toasted sunflower seeds and toasted chopped cashew nuts.
Drizzle generously with the dressing and toss to coat well.
