- 2 cups zucchini noodles
- 2 cups cucumber noodles
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon salt, divided
- ¼ teaspoon ground pepper
- 1 avocado, diced
- 2 tablespoons fresh lemon juice
- 1 small clove garlic, crushed
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- ¼ teaspoon crushed red pepper
In a large bowl, toss together the zucchini and cucumber noodles with salt and pepper.
Add the avocado to a food processor along with fresh lemon juice, crushed red pepper, paprika, oil, garlic, cumin, and salt; process until smooth.
Pour the sauce over the zucchini mixture and toss to coat well.
Divide among the serving bowls and drizzle with the remaining sauce. Enjoy!
