Tamari-lime & Creamy cashew Sauce
- 2 tablespoons creamy cashew butter
- 4 teaspoons fresh lime juice
- 1 teaspoon raw honey
- 4 teaspoons rice vinegar
- 2 tablespoons tamari
- 2 small garlic cloves, minced
- ¼ cup water
In a small bowl, whisk together fresh lime juice, tamari, rice vinegar, garlic, raw honey, and water until well blended. Add in cashew butter, sea salt, and black pepper and whisk until well combined. Set aside.
Using a spiralizer, shred the zucchini and cucumber into thin ribbons that resemble noodles.
Divide between serving bowls and top with diced tomato and broccoli. Pour over the sauce and toss to coat well.
